Desert Palette Veggie Pasta (aka Veggie Sketties)

2 Zucchini
3 Carrot
2 Tomato
1 Red Onion
*Any Other Vegetables Desired
1 Lemon
Spices:
Rosemary
Salt

Directions

Making the Sauce: If you wish to make sauce for your pasta you can use pre-made sauce for ease or make a simple tomato topping like I’ve shown here. To do this, simple begin to saute some garlic in the pan. I used oil and garlic to begin, with a little pinch of oregano. Once it began to cook, I added some diced tomatoes, onions, and water, then a few more pinches of oregano, salt, pepper, and rosemary.

Making the Vegetable Pasta: I use a cheap spiralini to create paste-like vegetable noodles. I have diced it before (when I didnt have the handy spiralini) & that also comes out just fine (just a different texture). I spiral the vegetables (zucchini is the common base, but I love adding carrots for added nutrition, color, and cheap bulk). Once spiraled, you can simply put a spoonful of oil into the pan and begin to cook. Add some rosemary while cooking. The noodles will cook rather fast compared to traditional pasta and the vegetables give off their own juice. So, you won’t need to use your precious water. One thing I hated about pasta at camp was the amount of water it used, especially at dry desert camps. That’s what makes this recipe great – it’s easy, cheap, not a resource hog, & very nutritious! Plus, your zucchinis and carrots won’t go bad right away at camp, so you can eat this meal a weak into being off-grid. It’s also just great at home as a noodle-alternative for you, your kids, and anyone who doesn’t want wheat.

Once the veggies are cooked to your liking, simply add some salt, pepper, lemon zest, & tomato sauce topper. Enjoy your delicious meal that will match the desert sunset you watch while you eat!
