Easy Enchilada Bowl for Camp side Fiesta!

Enchilada Bowl Recipe

Have enchiladas at camp! Easy enchiladas to make on the fire, in cast iron, but good for home too!

Ingredients (for 2-4 people)
Rice (2 cups)
Chicken or Beans (2 breasts, 1 cup)
1 Can of Tomato Sauce (or paste)
Cheese (type & amount by preference)
1 Onion
1 Pepper
Garlic cloves
Cilantro
Spices: Cumin
*Foraging Additions:
Siberian Miners Lettuce stems as a mild Green Onion! Or use the leaves as spinach.

At Camp on Fire:
Build a fire, place cast iron on fire grate.
Cook rice
*long grain rice or minute rice, brown rice or white rice. We use brown rice.
Add Chicken
*This is easier if chicken already cooked
Add Beans
*This is easier if beans already soaking day(s) before
Add Onion
*Add about a quarter to half an onion (white onion or red onion works fine.
Add Pepper
*green pepper is cheaper option but you can use any peppers, hot peppers if spicy preference
Add Garlic
*2 cloves, minced or diced small
Cook until everything is cooked and tender
Add half can of corn
Add small can of tomato sauce or paste
Stir
Place cheese on top
Sprinkle diced Miners Lettuce on top
Sprinkle cilantro on top
Serve with chips
