Guac on the Rocks
A classic guacamole that’s so easy to make you can toss it together at home or on a rock, literally. It makes a great snack or meal around camp or as a tote along during a hike. Salsa and guacamole are our go-to healthy snacks! Now, you’ll just have to decide which rocks to dine on.
2 Roma tomatoes
2 garlic cloves
*Optional Fruit: Mango or Pineapple
*Optional Greens (see Foraging suggestions below)
* Plain Greek Yogurt is another great additon and healthy substitution for the traditional sour cream
Mix and serve
Great Foraging Additions:
Try Miners lettuce for sweet green onion cuts or use the leaves as spinach. Add edible flowers, like rose petals or miners lettuce flowers. Berry shoots can be added. If wintertime in the Southwest add some prickly pear cactus bites!
