High on a mountaintop or somewhere on a foggy cool coastal beach, the chill comes over you. What better to warm you up than a delicious creamy hearty warm soup! This is a fairly simple recipe, fast to make, and flexible to your tweeks & tastes. Start with this base and make it your own. Dip your spoon into a delicious abyss of nutrition & flavors as you sit bundled up and gaze at a distant mountain across the valley or peer across the ocean into another unknown world.
Ingredients:
1 carrot, chopped
1/4 red onion, chopped
2 celery stalks, chopped
1 red potato, diced
Parsley leaves
Green onion
3 cups water
4 tablespoons Cheesy Broccoli soup mix
Pepper
Start by boiling 4 cups, 32 ounces, of water. Add veggies. Cook until tender. Add 4 tablespoons of cheesy broccoli soup mix. Add parsley. Let set. Serve.
*Note: If you are traveling, on the road long term or car camping, or need to store ingredients, the carrots, potatoes, broccoli soup mix, and garlic will last a good while. This is what makes this recipe great. With those core ingredients, you can still make a version of the soup even after days or weeks in the wild. The other ingredients are “extras” if you are closer to fresh produce!
